This coffee is big and bold, showing off a lot of ripe fruit character. The acidity is bright, balancing out the sweet chocolate richness of the finish.
What is a Peaberry?
Peaberry, also known as caracole, is a small round bean that is purposely screened out during the sorting process. Normally the fruit of the coffee plant develops with two halves of a bean within a single cherry, but sometimes only one of the two seeds gets fertilized so the other seed is unable to flatten it. This oval (or pea-shaped) bean is known as Peaberry. Around 5-8% of all coffee beans harvested are peaberries.
Peaberries have a reputation to roast and taste better than flat berries. Their round shape is one reason given for roasting more efficiently and having better flavor, but this effect has only minor influence, if any, on the final cup results. What contributes most to the quality of peaberries is that they have been carefully selected, which is essential for optimal quality regardless of bean shape.
